NEW FOOD TUESDAY!! JAN. 28TH

Oh Man!!! This one was SOOOO much fun!!! And is now, a new FAVORITE!!!

Chicken 'n' Waffles!!!

It's really not as difficult as I thought!! But, I had help. Pat made the Waffles from Scratch!!! But you can use a simple Waffle/Pancake Mix too!!!

Ingredients for Chicken:
Chicken washed and patted dry.
I used strictly Drumsticks for this, but you can use whatever you'd like.
Oil
Buttermilk
Flour
Salt/Pepper

Waffles:
You can make them from scratch or use Bisquick, just as easy.
Syrup (I heated it up to thin it out..YUMMMO!!!)
Waffle Iron

Instructions:
Put Chicken in a casserole dish or bake pan, pour Buttermilk until there is enough to cover the chicken. Put in Refrigerator for 2 hours.
Pour some flour into a bowl and add Pepper and Salt, stir until it's all mixed up.
Put oil into a skillet, 3/4 inches of oil
Put on Medium Heat
Take the Chicken, smothered in Buttermilk and put it in your flour mixture, cover completely
and put it into your HOT oil. I turned it only once.
Make sure the temp of the Chicken on the inside of each peice of Chicken is 180 Degrees.

Make the waffles, warm up the syrup and you're good to go!!
When you eat this meal, make sure you get a bite of, Waffles, Chicken covered in Syrup. It's SOOO good and you really don't know why!!!!

VEGAS TURNAROUND!!!

Our Vegas turnaround was a cool little adventure. Pat had to work on Saturday, this had to be a quick one. We left Saturday at 5:30pm, arrived in Las Vegas at Tommy Rockers at 9:30pm.


Thank Goodness the band didn't start til then. We sat down, then all of the friends started showing up!! It was great to see all of them and Kelly Carl Kenn and Dave sounded great!! ROCKIN'! Kelly finally saw us and it was great to see her! After a short break..Raven and Victor joined Carl Kenn and Dave on stage...Man!! these guys can P L A Y!!! So fun!! Christy  got up and blew the doors off the place, as usual, then Mike C joined them, then I was called up! We jammed on some AC/DC!!! Which, as all of you know, it's not a Party til you play some AC/DC!!! Took a Cake break!!!
Like Carl said, "This Doesn't Suck!!!"...Took some pictures...


Of Course, Kelly and I were messing around! Mike "Animal" showed up!!! What a treat that was!!! He's one of my favorite people in the world!!! He wanted to Jam with Kelly and I, and thus, WE DID!!!!
We jammed on some Priest and Def Leppard!!! It was SOOO awesome to Jam with him!!!

After all of those Shenanigans, we started our drive home! 1:20am arrived in Vista at, 5:15am. We only stopped twice, once so I could change clothes, (let the girls out), and once to Potty. At that time, a lot of Diet Pepsi and Chocolate needed! We didn't even unload the car until the afternoon!!! HA HA! Obviously, we slept in! What a great time, Pat and I chatted all way there and back. Once again, half the fun is getting there and back!!!

Happy Birthday Kelly, we WILL do this again!!!

NEW FOOD TUESDAY!!!

Chicken Enchilada Casserole
SOOO YUMMO!!!

This meal is really easy and we ate tortilla chips with it!!!
We put it together on Monday, put it in the fridge and warmed it up on Tuesday. So, I'm thinking you can also freeze this sucker for later!!!

Ok..here it goes...



Ingredients:
5 Boneless/Skinless Chicken Breast
1 23 oz can of Mild Red Enchilada Sauce
1 package Corn Tortillas
1 can of Refried Beans
Lots of Cheese (I used Mild Cheddar and Mexican Mix)
Cilantro
Green Onions
1 can Green Chilies
1 Onion
Salt and Pepper

Instructions:

Boil and Shred the Chicken
Put the Shredded Chicken in a big bowl
Salt/Pepper
Add the Can of Green Chilies
Add some Chopped Onion (not the Green Onion)
Mix up using your hands is best

In a Cake pan or casserole dish
Oil first and put a layer of Sauce and then tortillas
Then you put a Layer of Beans
Then Cheese
Then Chicken
Then Sauce
Then Cheese
Then Tortillas
REPEAT until you fill the pan You'll want at least 2 layers
Add Tortilla and Cheese on the Very top that's when you put the Cilantro and Green Onions
Cover with Aluminum Foil
Bake for 45 minutes at 375 degree and let stand and cool for 15 minutes.

We ate it with Tortilla Chips, but you can add Sour Cream, Guac, whatever you'd like. The kids LOVE this thing!!!

Pat and Sondee's Adventure to TOMBSTONE AZ

Our first post of one of our Travelling Adventures. We LOVE to travel and have experiences. 
Tombstone AZ. I've always wanted to return and see it as an adult. I (Sondee) was 2 (two) when I was there last, shockingly I don't remember it at all. Pat LOVES all that Old West/Haunted History stuff. So, on Sat., we got on the road at around 5pm, dressed in our "Travelling Clothes (sweats, PJ's etc.),
 stopped by Del Taco for dinner, and headed east!!! Packed in the car was a cooler FULL of drinks, Road Trip Snacks...
and 1 (one) suitcase of clothes. We had the music blaring, because if it's too loud, You're too old...The Toyota Highlander was a thumpin'!!!  We were talking, I had the GPS on my phone so we knew where we were going..HA HA! We only stopped twice for potty breaks and stretching. The smell of El Centro/Imperial Valley was "earthy"  so we sped up to get through all of that. The moon was pretty though:

Once we hit the AZ border we could travel at 75 MPH! So we did!!! Stopped in YUMA for gas, and was on the road again. Our next stop, Tucson AZ to sleep:
Cheap Hotel for 6 hours of sleep. Not even showers in the morning!! HA HA!! No we took showers before we left...We woke up and just took our time. Didn't want to rush, we were on a mini Vacay. 

We got up, got gas, $3.04, in CA it's $3.58, and hit the trail. Oh, we had breakfast on the way:
And yes, we ate it all!!!! We turned on the Tunes, turned on the GPS, and headed Southeast!! We were so excited!! From Tucson it's about an hour to Tombstone. 

TOMBSTONE AZ is an Historical Landmark, but does NOT have a parking lot. So, we parked on the street in front of someone's house. 
As you see on the left, that's the famous OK Corral, which is our First Stop. We bought tickets to "Everything" and "Everything" includes, The gunfight, the actual site, the Tombstone Historama, and a copy of the paper from the day after the gunfight. That was great to start with, so you can have the rest of the day to explore the town. After we bought the tickets, we walked outside to see the blacksmith shop, stables, etc. This is all before we get to go to the actual Ok Corral site.


One of Pat's favorite things! Then we found the Prostitutes Crib....OH how fun!!!

Then we finally got to the site!!!! So exciting!!
The feeling was really cool. It was history, right there!!! These famous men stood here. We did the same thing when we were in DC. History Geeks! We then went to the re-creation of the Gun Fight. You can see part of the video on our FB page. The show is around 25-30 minutes long. They tell the history and what led up to the gunfight AND what happened to all them after the fight!! Very Very interesting.
The stage of the Re-Creation. See the C.S Fly (not McFly) Photographer? He was a very famous Photographer at that time. He did most of his work with the Apache Indians. His most famous picture is of Geronimo!!! So very cool. After the show, we went into his studio to see some of his work.

Then we went to explore the rest of the town, but first, FOOOOOD at Big Nose Kate's Saloon!!! Thanks Deb for the tip! SO MUCH FUN!!! The walls are filled with history and other stuff. There's a short Video on our FB. You can see and hear the piano player, who's playing, singing and doing shots at 12noon. It's 12 O'clock somewhere and it happens to be here!!! FOOD was really really good. Kate's is a Saloon that serves food, not a restaurant that serves drinks!!! Drink first, eat later!!



After lunch, off to the town, we saw the Haunted Blue Bird Theatre, Bordello. Lots of shops and I didn't realize that the Old West had Frozen Yogurt....


We got to see real bullet holes from cowboys fighting over which girl they get at the Blue Bird. OH, Tombstone became a National Historical Landmark in 1961.
The town has plenty going on all day, bank robberies, gun fights, stagecoach rides, and tours of the Silver/Gold Mines.
The stage coaches are old, this one is 113 years old, pulled by Burros:
On our way out, we saw another interesting artifact,
Pat is taller than those Clanton boys.

The day was so much fun! You know the saying, half the fun is getting there, and it truly was and the way home too!!!
This house is on the way out of town. And then, we were on our way home!!!

But this is really pretty to drive towards...
Great mini Vacay! This trip takes 7 hours to Tombstone AZ from our house in Vista, CA. So worth it.

2nd NEW FOOD TUESDAY

Chicken and Dumplings and Fresh Dinner Rolls
Yes, it was GOOOOOD!!!!

This meal was like Thanksgiving Dinner....we all wanted to nap after dinner. But with the Carb Load Fest, everyone should be able to run a Triathlon today. You would think this meal is lot of work, but really it isn't.

Put it all in your Crock Pot.  It'll take 6-8 hours, but, sooooo worth it.

Ingredients:

  • 1 can Cream of Chicken
  • 1can Cream of Celery
  • 1 can of Water
  • 4/5 Boneless/Skinless Chicken Breasts
  • 3 1/2 Cups of Chicken Stock
  • Salt/Pepper

Put it all in the Crock Pot and set on LOW for 6-8 Hrs. As the chicken cooks, I shredded it. And you can add, onions, chopped carrots and celery, whatever you would like. I also like to put this over Mashed Potatoes. Talk about Comfort Food.

Dumplings: My gram's recipe

  • 3 Eggs beaten
  • 2 Cups of Flour
  • Dash of salt
  • If needed, a splash of  water.

Let dry on the cutting board.
An hour before the Chicken is done, add the Dumplings.

Roll out the dough and cut into shapes. Whatever, you would like. I cut them into squares, but noodles, Mickey Mouse any shapes are fun. The Dumplings and Flour will thicken up the liquid, so there's no need to add more flour to make it "gravy like".

This recipe served 6 people with a little leftover for lunches the next day.

This meal is YUMMY GOODNESS!!! Great for a cold night to snuggle. But, here in So. Cal, we are at 84 degrees, but, I wanted to make this anyway! I've already had orders from friends, HA HA HA!!!

NEW FOOD TUESDAYS

Our first adventure this year has been, we decided that every Tuesday will be NEW FOOD TUESDAY...I love to cook and love to try new recipes, so, on Tuesdays when we have the kids over, they have agreed to be our Guinea Pigs..!!!

So last Tuesday was:
LOADED POTATOES CHICKEN CASSEROLE
As it went in the oven
When it was finished!!!

And......DRUMROOOOOOOOOOOOLLLLLLL!!!!!

THEY LOVED IT!!
Hearty, Loaded ha ha! it's great the next day too. This recipe is not hard to make at all. This is definately a keeper!!! Well, after all, how can you go wrong with , Bacon, cheese, and potatoes!!!

Here's how you make it!!!

Ingredients:

  • 2 lbs. Boneless Skinless Chicken Breasts cut into cubes
  • 8-10 medium potatoes cut into cubes, skin on or off whatever your preference. (I made this for kids, so I peeled mine..Ha ha!)
  • 1/3 cup Olive Oil
  • 1 1/2 teaspoon of salt
  • 1 tablespoon of Fresh Ground Pepper
  • 1 tablespoon Paprika
  • 2 tablespoons Garlic Powder
  • 6 Tablespoons Hot Sauce. I used Cholula yummo!
  • Bacon
  • Green Onions
  • Shredded Cheese (I used Mild cheddar, you can use the Mexican Mix too or whatever you like)
Instructions:
Pre-Heat Oven to 450F
In a large bowl, mix together, Olive Oil, Salt, Pepper, Paprika, Garlic Powder and Hot Sauce. 
Add potatoes and stir to coat all potatoes. Make sure you leave a little extra in the bottom of the bowl when scooping the potatoes.
Put the coated potatoes in a Greased Baking dish.
Add the diced Chicken to the "Left Behind" extra sauce and allow to marinate while the potatoes cook.
Roast the Potatoes for 45-50 minutes, stirring every 15-20 minutes, until cooked through and nice and crispy on the outside.
While the Potatoes are cooking and the Chicken is marinating, cook your bacon and chop up your onions.
Once the Potatoes are cooked fully, remove them from the oven, obviously, reduce heat to 400F.
In a bowl, crunch up the cooked bacon, add the diced onions and mix it all up.
Now you put it all together!!! This is the fun part.

On top of the potatoes, add your Chicken and some Cheese
On top of the Chicken, put the rest of your Cheese and then top that with your Bacon and Onions!!!

Put it in the oven for 20-30 minutes, Check to see when your Chicken is cooked through.

It'll be really hot out of the oven, doh, so please let it sit for 10-15 minutes. Of course, if it's too spicy hot for some, Ranch Dressing is a great topping.

Hello All!!!

WELCOME to our NEW FAMILY BLOG!!!

The reason for this blog to document and share our adventures. It's a new year and we want to make sure everyone can share with us.

Alot happened the last couple of years. Sondee moved from Las Vegas to Sunny Southern California, Nolan graduated from UNLV and is working in Las Vegas. Pat and Sondee were Married in September!! That's probably the biggest happening of all and many more. So this year we will post post post all year!!!

So please buckle up for an 'E' Ticket ride with Pat and Sondee and their family!! (for those of you too young to know, google E Ticket Disneyland)
